
Christmas Recipe: Swedish Cinnamon Buns
Start the festive season right with an easy, Swedish-inspired Christmas cinnamon bun recipe from Haglöfs that comes together in just a few simple steps.

Ingredients (30-40 buns, sweet dough)
● 500ml whole milk (room temperature - cold works fine too)
● 50g fresh yeast
● 135g caster sugar (about 150 ml / x cup)
● 1 tbsp vanilla sugar (or substitute with 1 tsp vanilla extract)
● 3 tsp ground cardamom (preferably freshly ground)
● 2 tsp ground cinnamon
● About 900g plain flour (about 14-15 cups)
● 200g unsalted butter, softened
● 1 tsp salt

Cinnamon Filling
● 250g unsalted butter, softened
● 90g caster sugar (about 100ml / ½ cup)
● 80g light brown sugar (about100 ml / ½ cup)
● 50 ml ground cinnamon (about 5 tbsp)
● 1½ tsp plain flour (this keeps the filling from leaking out)
● a generous pinch of flaky sea salt

Sugar Syrup for Brushing
● 100ml water
● 90g caster sugar (about 100ml / ½ cup)

Decoration
● Pearl sugar (or coarse sugar as an alternative)

Instructions
1. Make the dough
Crumble the yeast into a large mixing bowl and pour in tthe milk. Stir until the yeast is completely dissolved. Add half of the flour along with the sugar, vanilla sugar (or extract), butter cardamom and cinnamon.
Mix until a sticky dough forms. Add the salt and more flour a little at a time (you might not need all of it).
Knead the dough with a stand mixer for at least 10 minutes until it's smooth, elastic and glossy.

2. Prepare the filling
In a separate bowl, combine butter, cast sugar, brown sugar, cinnamon, flour and salt until smooth and creamy.

3. Shape the buns
Roll out the dough into a large rectangle (or two if your work surface is small).
Spread the cinnamon filling evenly over the dough. Cut the dough into strips about 2 cm (¾ in) wide - a pizza cutter works great.
Roll each strip into a bun, tucking the end underneath. Place the buns on a baking tray lined with baking paper. Cover with a clean tea towel and let rise for 2-3 hours until puffy and almost double in size.

4. Bake
Preheat the oven to 200℃ fan (220-225℃ conventional).
In a small saucepan, bring the sugar and water to boil to make the syrup. Set aside.
Bake the buns for 8-10 minutes, or until golden brown on top. Check the bottom of a bun - if it's golden, they're done.

5. Finish
Brush the hot buns with the sugar syrup immediately after taking them out of the oven, then sprinkle with pearl sugar.
Transfer to a wire rack and let cool slightly before enjoying.
