
Festive Cinnamon Banana Bread

Ingredients:
150g Pecans
225 self-raising flour
½ tsp mixed spice
½ tsp cinnamon (can be added more when preferred)
150g butter
125g soft brown sugar
2 tbsp clear honey
2 large eggs (beaten)
215g very ripe bananas (peeled weight, can add more bananas when preferred)

How to do:
- Preheat oven to Fan 160/180 C or Gas 4
- Get an oven tray with backing paper on and put the Pecans on it.
- Cook the Pecans into the oven for 5 minutes and then chop them into small pieces.
- Mix the flour, mixed spices, cinnamon and pecans in a bowl.
- In a separate large bowl, beat the butter until it’s soft. Add the sugar and keep beating it until it’s fluffy and then add the honey to it. After that add the eggs into the butter mixture little by little.
- Mash the bananas really well and add them into the butter mixture along with the flour-spice-nuts mix.
- Bake for 1 ¼ to 1 ½ hours. Put it on a rack to cool down
- ENJOY! We recommend eating this as a post-race snack and is best served with a hot drink.
